For nearly 100 years the Fabiano family have been growing, producing and selling wines from the Veneto region in North East Italy. This winery is now run by the fourth generation, brothers Alessandro and Michele Fabiano, under the watchful eye of their father Nicola. The grapes are dried over winter, then macerated for 30 days at the beginning of February at around 14°-15° C and the soft pressing yield a mere 36% of must. The alcoholic fermentation is much warmer and lasts for a further 30 days. This is followed by three years of ageing including 12 months maturation in traditional chestnut barrels. Intense garnet red colour with an elegant, spicy and complex nose. This is a full bodied wine with a luxurious mouth-feel. On the palate there are notes of sour cherries with hints of ripe plum, cinnamon and spices. This is beautifully structured wine with very soft, tannins and gentle acidity, a wine to savour and cellar.
