Ca di Mat estate spans 20 hectares of organically cultivated vineyards, featuring vines ranging from 30 to 80 years old, including Garnacha, Albillo, and Moscatel varieties. Rather than replanting, much of the vineyard is undergoing a careful recovery process to preserve and rejuvenate the old vines.
The estate experiences a continental climate with vineyards situated at altitudes between 700 and 850 meters above sea level. The area receives an average annual rainfall of 600 mm and maintains an average yearly temperature of 13.7°C.
Valautín in Piedmontese means the valley of small vineyards. Their old vine Garnacha is grown above San Martin de Valdeiglesias on decomposed granitic soil. The winemaking process involves macerating the fruit (40% whole bunch) for 14 days with hand punching, followed by pressing in a basket press. All press wine is combined with the free-run juice. The wine then matures for one year, with 50% aged in oak barrique and demi-muid, and 50% in cement vessels.
In the glass, it presents a pale ruby colour, hinting at its delicate nature. The nose is complex and enticing, offering a bouquet of red fruits complemented by subtle spices and delicate floral aromas. On the palate it arrives with a gentle, balanced entry. Ripe fruit flavours take centre stage, evolving into a long, luscious finish that lingers pleasantly.
