Mas del Périé, run by the young Fabien Jouves, is located on the Haut Plateau southwest of Cahors in Trespoux Rassiels. The terroir consists of complex clay and Quercy Limestone, a soft, permeable white tufo-style limestone. Occasional gravel deposits contribute to wines with enhanced immediacy and freshness.

The vineyard follows biodynamic principles. Grapes are hand-harvested and carefully selected before fermentation in inert oak or concrete, depending on the cuvée. Maceration typically lasts around 30 days. The wines are neither filtered nor fined. Fabien's five-year experience in Bordeaux has refined his skill in masterful tannin management.

This wine is crafted from 100% Malbec grapes grown in Kimmeridgian soil with siderolitic deposits. The vineyard is situated atop the Quercy plateau, characterized by deep clay and 'pierre blanche' soils. After harvesting, the fruit is destemmed and fermented in concrete tanks. The wine then undergoes an 8-month aging process, split between concrete vessels and 3 to 4-year-old barriques.

La Roque Cahors presents an intriguing aromatic profile, opening with earthy notes of undergrowth and truffle. On the palate, it offers a full, round mouthfeel with impressive length. The tannins are well-integrated and refined. The gustative bouquet is defined by flavours of black fruits, spices, and subtle tobacco notes.

This wine strikes a balance between fruitiness and power, making it an excellent companion to rich meat dishes. It pairs particularly well with duck breast (magret de canard) or lamb cutlets.
