Fernando de Castilla's Classic Dry Oloroso Sherry is produced entirely from Palomino Fino grapes grown in Jerez de la Frontera. The grapes are pressed and the resulting wine is fermented in stainless steel tanks until it reaches an alcohol content of 11% ABV. The dry wine is then fortified to 18% ABV and aged for 8 years in oak casks according to the traditional solera and criadera system, but without the presence of flor (the veil of yeast that forms on pale dry Sherries).
In the glass, this Sherry displays a rich mahogany colour. The aroma offers notes of walnuts, spice, and a touch of orange peel. While not as intense as an Antique Oloroso Sherry, this wine is pure and dry, making it an excellent pairing for food. It would complement dishes like nuts, pâté, cheese, soups, and stews particularly well.
The recommended serving temperature for this Sherry is 14-16°C (57-61°F).
