The Chardonnay grapes are sourced from Maso Toresella in Valle dei Laghi. Harvested by hand, they then undergo careful selection, and are gently pressed. After a period of skin contact (10 hours), the must is fermented in oak barriques, where the wine is then left to mature for 6 months. After bottling the wine is refined in the bottle for a further 6 months.
Fresh and vibrant nose with notes of lemon zest, Cox's apple and lightly toasty, savoury notes. On the palate there are complex apricot, tinned peach and honeydew melon characters, and fine, well integrated oak, balanced by fresh and crisp acidity.
Pair with baked or grilled fish dishes - such as swordfish with capers and cherry tomatoes, or red snapper baked in foil.
