Grown organically in the Côte Chalonnaise, specifically in the village of Fley, the grapes come from a terrior characterised by limestone and chalk soils at relatively high altitudes, offering a profile comparable to Burgundy's finest terroirs.
Grapes were gently pressed without the use of SO² and underwent fermentation with wild yeasts. Malolactic fermentation occurred naturally with indigenous bacteria. Post-fermentation, the wine was stirred on its lees to enhance mouthfeel and achieve balance. Produced with minimal effective SO² was used. The wine was bottled without fining or filtration.
Aging took place in a combination of 15% new oak and the remainder in seasoned barrels, adding complexity and subtle oak influence.
