Organically cultivated grapes from the Côte Chalonnaise, in the village of Fley, are sourced from a terrior rich in limestone and chalk soils at a relatively high altitude, offering qualities comparable to the renowned Burgundian terroirs.
Grapes were gently pressed without the use of SO², followed by fermentation with indigenous yeasts. Malolactic fermentation occurred naturally with native bacteria. Post-fermentation, lees stirring was employed to enhance mouthfeel and achieve a balanced structure. Only minimal effective SO² was used, and the wine was bottled without fining or filtration.
Aging took place in a mix of 30% new oak barrels and the remainder in seasoned oak allowing for a nuanced integration of flavours.
