The grapes are organically grown in the village of Santenay, specifically in the Sous La Roche Lieu-Dit. This rocky limestones and marl terrior encourages deep vine rooting, enhancing the wine's mineral complexity.
Grapes were gently pressed without the SO², then fermented with wild yeasts. Malolactic fermentation occurred naturally with native bacteria. Followed by lees stirring to achieve a balanced, full mouthfeel. Minimal effective SO² was used, and the wine was bottled without fining or filtration.
Aging took place in a combination of 50% new oak, with the remainder in seasoned oak, for a refined integration of flavours.
