Renowned for using a natural approach to winemaking resulting in each of their single varietal wines being truly influenced by the chosen varietal and its vineyard it is produced from. This Mourvèdre comes from a small parcel of land known for producing low yields with great concentrated balanced wines.
Hand picked and brought to the cellar by horses, the grapes undergo hand sorting before being whole-bunch fermented with wild yeast. This is then left on skins for 30 days, being manually punched down 1-2 times a day before going into 600L old oak barrels to then age for 24 months before being bottled.
An elegant rendition of this often unruly varietal, producing ripe dark fruits with graphite notes, with robust and concentrated wild herb and red berry aromas accompanied by dense yet fine tannins and a freshness from the natural acidity that brings a lightness to the wine. Perfect alongside grilled lamb or a rich wild boar dish.
