The grapes are sourced from various Wineyard sites in and around the Brancott Valley and the central Wairau Plains. The soil types vary from the young alluvial soils of Rapaura and Renwick, which contain high proportions of Greywacke river stones to the older and denser clay loams of the South Valleys. The Sauvingon Blanc grapes are havested by machine during the cool night time conditions. The grapes are lightly pressed and the majority of the juice undergoes cold fermentation in stainless steel tanks using cultured yeast. The remainder of the juice goes into old French oak barrels where it is allowed to undergo spontaneous indigenous yeast fermentation. A tangy salsa like combination of honeydew melon, yellow peach and pawpaw tossed with some red capsicum, a spring of spicy tomato leaf and a twist of grapefruit zest. It is intensely aromatic, mouth-filling wine with a refreshingly crisp, flinty finish.
